    In a medium bowl stir together the cocoa powder with 2-3 tablespoons of the heavy cream to form a paste. Refrigerate the remaining cream until ready to use.

    Add the cold cream cheese to the cocoa paste and combine with a mixer to soften for 30 seconds. Then add the sugar, salt and vanilla and continue beating to fully incorporate. You can check a small amount between your fingers. There shouldn’t be any grittiness.

    While the mixer is running, pour the remaining heavy whipping cream down the side of the bowl (prevents splashing) and beat until soft peak form.

    Spread or pipe (using a pastry bag and star tip) the frosting on layer cakes or cupcakes. This makes a generous amount of frosting and the recipe can be halved.
