Toast pecans over low heat and set aside to cool. Rinse, core and chop apples and drizzle with lemon juice. Rinse celery and slice and add to apple mixture. Gently fold in yogurt and refrigerate. When ready to serve, stir in dried cherries, toasted pecans, and cheese if desired.
