Lemony Poppy Seed Muffins

Ingredients
  • 1/3 c. AE Fat Free Milk
  • 1/4 c. unsweetened applesauce
  • 2 T. vegetable oil
  • 1 c. AE Lemon Lowfat Yogurt
  • 1 egg
  • 1 3/4 c. flour
  • 1/4 c. sugar
  • 2 T. poppy seed
  • 1 T. grated lemon peel
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt

Lemon Glaze

  • 1/2 c. powdered sugar
  • 2 tsp. lemon juice
Directions

Heat oven to 400 degrees. Grease bottoms only of 12 regular size muffin cups or line with paper baking cups.

In a large bowl, beat together milk, applesauce, oil, yogurt and egg. Stir in remaining ingredients except Lemon Glaze just until flour is moistened. Divide batter evenly among muffin cups.

Bake 15 to 18 minutes or until golden brown. Immediately remove from pan. Drizzle Lemon Glaze over warm muffins.

Lemon Glaze: mix powdered sugar and lemon juice until smooth and drizzling consistency.
