Parmesan Pepper Dressing

Ingredients
  • 1/3 c. AE Lowfat Buttermilk
  • 1/3 c. AE Cottage Cheese
  • 1/3 c. freshly grated parmesan cheese
  • 4 tsp. white-wine vinegar
  • 1 small clove garlic, minced
  • 1/2 tsp. freshly ground black pepper or to taste
Directions

In food processor or blender, combine all ingredients except pepper. Blend until smooth. Stir in pepper. Makes about 1 cup. Serve fresh over crisp, washed greens, croutons and red onion slices. (Can be stored, covered, in the refrigerator for up to 2 days.)
