Chicken Salad with Curried Greek Yogurt Dressing
Ingredients
- 1/2 c. light mayonnaise
- 1/2 c. AE Classic Greek Yogurt
- 3/4 tsp. curry powder
- 1/4 tsp. salt
- 3 cups diced cooked chicken
- 1 1/2 c. red seedless grapes, cut in half
- 3/4 c. sliced celery
- 1/3 c. thinly sliced green onion
- 2 Granny Smith apples, cored and chopped
- 1/3 c. toasted pecans
Directions
In a small bowl whisk together first four ingredients for the dressing. Toast pecans and set aside to cool. In a large bowl, combine chicken, veggies and fruit. Pour dressing over chicken mixture and gently fold to combine. Stir in nuts just before serving. Serve over lettuce leaves with whole grain bread or rolls.
