Chocolate Pepsi Bars

The AE Buttermilk combined with Pepsi's carbonation give this cross between a brownie and chocolate cake delicious moistness. A perfect take-along for potlucks and picnics.


For the Bars:

  • 1 cup butter
  • 2 tablespoons unsweetened cocoa
  • 1 cup Pepsi
  • 2 cups sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ cup AE Buttermilk
  • 2 eggs
  • 1 teaspoon vanilla extract

For the Frosting:

  • 6 tablespoons butter, softened
  • 1 ½ cups granulated sugar
  • 6 tablespoons AE Milk (any variety)
  • ½ teaspoon vanilla extract
  • ½ cup semi-sweet chocolate chips


Preheat oven to 350 degrees and spray a 9 x 13 pan with nonstick cooking spray.

In a medium sauce pan combine butter, cocoa and Pepsi and bring to a boil. Remove from the heat and pour into a mixing bowl. Stir in sugar, flour, baking soda to combine well. Then add buttermilk, eggs and vanilla stirring well. Pour the batter into prepared pan and bake for 35 minutes or until toothpick inserted in the center comes out clean. Cool for about 10 minutes.

While bars are baking, prepare the frosting. In a medium sauce pan, combine butter, sugar, milk and vanilla and bring to a boil. Remove from the heat and add chocolate chips.

Spread frosting over bars while they’re still warm.

Makes 12-15 servings
