Sour Cream Coffee Cake with Cinnamon Streusel

Ingredients

For the cake:

  • 1 cup butter
  • 1 ¼ cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup AE Sour Cream (regular is best)
  • 1 teaspoon vanilla extract

 

For the streusel:

  • 2 Tablespoons butter, softened
  • ½ cup brown sugar
  • 2 Tablespoons flour
  • ½ teaspoon cinnamon

Directions

Preheat oven to 350 degrees and spray a 9 x 13 pan with nonstick cooking spray.

In a large bowl, mix butter and sugar to combine well. Add eggs one at a time to mix thoroughly. In a separate bowl, combine flour, baking powder and soda. Add the flour mixture to the butter mixture alternately with the sour cream. Mix well and then stir in the vanilla extract.

To make the streusel, combine all ingredients thoroughly using two knives or a pastry blender.

Pour half of cake batter into prepared pan and sprinkle with half the streusel. Repeat layers and then bake for 30 minutes or until a toothpick inserted in the center comes out clean.
