This cross between an oatmeal cookie and a muffin is anything but boring. Serve warm with milk for an extra hearty start to the day.

    Preheat oven to 350°F; lightly coat a 9-inch round cake pan or quiche pan with nonstick spray. Stir together the oats, brown sugar, baking powder, cinnamon, nutmeg, and salt in a large bowl. In another bowl, whisk together the eggs, milk, melted butter, and vanilla. Pour over the oat mixture, add the dried fruit and walnuts, and stir until well blended. Transfer the mixture to the prepared pan and bake for 30 to 35 minutes, or until set. Let stand 5 minutes before cutting into wedges and serving. Pour additional milk over the oatmeal if desired.
