Lemon-Strawberry Overnight Oats

  • 1 carton AE Lowfat Lemon or Lemon Mousse YoLite Yogurt
  • ½ cup old-fashioned oats
  • 1/3 cup AE Milk (any variety)
  • 2 tablespoons chopped dried strawberries
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • Strawberry preserves (optional)
  • Toasted sliced almonds (optional)
  • Chopped fresh strawberries (optional)



In a bowl combine the yogurt, oats, milk, dried strawberries, vanilla and salt. Divide the mixture between two half-pint-sized mason jars with lids (or plastic containers with lids). Cover the jars and refrigerate overnight. Before serving, stir the oats to blend and top with preserves, almonds and fresh strawberries if desired.
