Parmesan Pepper Dressing

  • 1/3 cup AE Lowfat Buttermilk
  • 1/3 cup AE Cottage Cheese
  • 1/3 cup freshly grated Parmesan cheese
  • 4 teaspoons white wine vinegar
  • 1 small clove garlic, minced
  • ½ teaspoon freshly ground black pepper, or to taste

In a food processor or blender combine all ingredients except the pepper. Blend until smooth, then stir in the pepper. Serve over crisp salad greens with cucumbers, tomatoes, shredded carrots and croutons. (Dressing can be stored, covered, in the refrigerator for up to 2 days.)
