Chorizo and Egg Breakfast Totchos

AE Dip for breakfast? Oh yes! It really "makes" this spicy start to the day.

  • 1-30 oz. bag of potato rounds or tots
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cayene pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 lb. chorizo, cooked
  • 4 eggs, scrambled
  • 1/2 cup shredded Mexican Cheese
  • 1/3 cup AE Hot Jalapeno Mexican (or Mexican) Dip
  • 1 roma tomato, chopped
  • 1 jalpeno, sliced
  • 1/4 cup, cilanto, sliced
  • 1/3 cup avocado, diced


Combine the salt, pepper, cayenne pepper, paprika, cumin and garlic powder in a small bowl. Sitr until combined.

Toss the tots in the spices and bake according to the package directions.

Top the baked tots with the chorizo, scrambled eggs and cheese. Bake for three more minutes or until cheese is melted.

Top with AE Dip, chopped tomato, jalapeno, cilantro and avocado.
