Fruit Crisp

Everyone needs a good crisp recipe to enjoy summer's bounty, and we like this cross between a fruit bar and cobbler. It's perfect topped with our Yogurt Whipped Cream.


1 1/2 cups fresh blackberries*
1 1/2 cups fresh raspberries
1 1/2 cups fresh blueberries
4 tablespoons granulated sugar (We think this is optional.)
2 cups all-purpose flour
2 cups oatmeal (We like Old Fashioned Oats)
1 1/2 cups packed brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/2 cups butter

*Note, you can also substitute 6-8 cups fresh sliced peaches for the total amount of berries.


Preheat oven to 350 degrees. In a large bowl, toss berries with sugar, if using and set aside. In a separate large bowl, combine flour, oats, brown sugar and spices. Cut in butter until crumbly. Press half of oat mixture in the bottom of a 9 x 13 inch pan. Cover with berries or peaches. Top with remaining crumble mixture. Bake for 30-40 minutes, or until fruit is bubbly and topping is golden brown.
