In a mixing bowl combine yogurt, peanut butter, and protein powder. Mix until smooth.

Line a sheet pan with parchment paper and scoop the yogurt mixture into 8 round or rectangular shapes. Place a popsicle stick or paper straw into the center of each bar. Freeze for 20 minutes until set.

In a separate mixing bowl combine chocolate and coconut oil. Microwave in 30 second intervals, stirring each time, until the chocolate is smooth.

Remove the yogurt bars from the freezer and dip each one in the melted chocolate. While the chocolate is still soft, top with a sprinkle of chopped peanuts and flaky sea salt. This is best done in smaller batches.

Place the dipped bars back in the freezer for 10 minutes or until the chocolate is set. Enjoy frozen, leftover bars can be stored in the freezer for up to a week.
