Off the flame, add 1/2 cup white wine and allow to reduce and evaporate.

Fold in your tomatoes, being sure to break them up.

Bring entire mixture back to a boil and then lower heat and simmer for 2-3 hours.

If your sauce is dry, add water or stock as needed.
