Caramelize the onions: In a skillet over medium heat, melt 1 tablespoon butter. Add sliced onion, salt, and sugar. Cook, stirring occasionally, until soft and deeply golden, about 12–15 minutes. Stir in Worcestershire sauce and cook 1–2 minutes more. Remove from heat and stir in 1 tablespoon AE Dairy Toasted Onion Sour Cream Dip. Set aside.

Build the sandwich: Spread a thin layer of AE Toasted Onion Sour Cream Dip on one side of each slice of sourdough. Layer American cheese, caramelized onions, and chopped chives between the slices (dip-side out).

Grill: Melt remaining 1 tablespoon butter in a skillet over medium heat. Cook sandwich until bread is golden brown and crisp and cheese is fully melted, about 3–4 minutes per side.
