Marinate the Pork: In a bowl, whisk together AE yogurt, garlic, dill, oregano, lemon juice, salt, and pepper. Place the pork loin in a zip-top bag or shallow dish and coat with the marinade. Cover and refrigerate for 1 hour.

Sear the Pork: Preheat oven to 400°F. Remove the pork from the marinade and pat lightly with paper towels to remove excess. Heat a drizzle of olive oil in an oven-safe skillet over medium-high heat. Sear the pork on all sides until golden brown — about 2–3 minutes per side.

Roast to Finish: Transfer the skillet to the preheated oven and roast for about 10–12 minutes, or until the internal temperature reaches 145°F. Remove from the oven, tent with foil, and let rest for 5–10 minutes before slicing.

Make the Cucumber Yogurt Salad: While the pork cooks, combine cucumber ribbons, red onion, AE yogurt, lemon juice, salt, and pepper. Toss gently and refrigerate until ready to serve.

Serve: Slice the rested pork loin and serve with a generous scoop of cucumber yogurt salad on the side.
