Kiwi Lime Parfaits

  • 1/2 cup angel food cake, torn into fine pieces
  • 2-3 teaspoons AE Orange Juice
  • 2-6 ounce cartons AE Key Lime Yogurt
  • 1 kiwi, peeled and finely chopped
  • 2 tablespoons crushed gingersnap cookies

Sprinkle cake pieces with orange juice. In two clear goblets, layer cake pieces, then yogurt, kiwi and crushed gingersnaps. Repeat layers. Garnish with additional kiwi and cookie crumbs. Cover tightly with plastic wrap and refrigerate until ready to serve.  These can be made several hours prior to serving.
