Fluffy Buttermilk ‘n Cream Griddle Cakes AE Buttermilk and Sour Cream give these light and fluffy pancakes a delicious flavor. Makes 4-6 servings Ingredients: 1 cup flour, 1 cup whole wheat flour, 1 tablespoon baking powder, 1 teaspoon baking soda, 3 tablespoons granulated sugar, 1 teaspoon cinnamon, 1/3 cup canola or vegetable oil, 2 eggs lightly beaten, 1 ½ cups AE Buttermilk, ¾ cup AE Sour Cream. Instructions: Sift together the dry ingredients in a large bowl. In a separate bowl, whisk together the oil, eggs, buttermilk and sour cream. Add the liquid ingredients to the dry ingredients to combine well. Spray a griddle with nonstick cooking spray and use about 1/4 – 1/2 cup batter for each cake. Serve with your favorite syrup or top with AE Yogurt or Yogurt Whipped Cream and fresh fruit.
