Chive Cottage Cheese Egg Rolls

In a large bowl, combine all ingredients for the filling and mix well. You should have a thick consistency. If too runny, add more parmesan cheese.

Lay an egg roll wrapper with a corner facing you and place 2 tbsp of the filling in the middle of the wrapper.

Fold the left and right corners in, over the filling.

With the corner closest to you, cover the filling and roll tightly, leaving 2 inches of the opposite corner exposed.

Dip your finger in water and brush on the exposed corner and roll tightly to seal.

Repeat with the remaining wrappers.

Preheat your air fryer to 400* and cook for 14 minutes, flipping halfway through.
