These Cottage Cheese Brownies are rich, fudgy, and surprisingly light thanks to AE Dairy’s 4% large curd cottage cheese. The protein‑packed base blends smoothly with whole milk, creating a mousse‑like batter that bakes into silky squares. With dark chocolate, cocoa powder, and mini chips, the chocolate flavor is intense. Cool completely before slicing for perfect edges, and top with vanilla ice cream for an indulgent finish.

    Preheat the oven to 350 degrees and lightly grease a 9x9 baking dish (for a slightly thick brownie) or a 9x13 baking dish (for a bit thinner brownie).

    In a blender add the cottage cheese, melted butter, sugars, eggs, milk, vanilla and melted dark chocolate. Pulse in the blender until fully combined and frothy.

    In a mixing bowl sift together the dry ingredients. Gently pour in the wet ingredients and stir together slowly to combine. Do not overmix.

    Fold in the mini chocolate chips.

    Pour the batter into the pan and bake for 20-24 minutes. A toothpick inserted in the center should come out clean or just a bit wet. If using a 9x9 baking dish you may need to bake a couple extra minutes.

    Let the brownies cool completely before cutting into squares.
