    Preheat the oven to 400 degrees and lightly grease a 11x17 rimmed baking sheet.

    Place the diced vegetables and garlic cloves onto the baking sheet. Drizzle with the avocado oil and sprinkle with salt and pepper. Gently toss to coat all the pieces.

    Place on the bottom rack of the oven. Cook for 25-30 minutes, stirring halfway through.

    While the vegetables are roasting, make the sour cream herb sauce. In a bowl or mixing cup combine all the ingredients and stir. If the sauce is too thick add a splash of milk or water.

    Remove the vegetables from the oven serving warm. Drizzle the vegetables with the sauce.
