Orange Sesame Chicken

In a bowl combine the diced chicken breasts pieces with the egg white, soy sauce, orange zest, salt and pepper. Toss to coat and set aside.

Put the cornstarch in a shallow bowl and gently dredge the chicken, tossing lightly (the chicken pieces do not have to be completely coated) and place on a plate until ready to pan fry.

Heat the avocado oil in a large, rimmed skillet over medium high heat. Add the chicken, working in two batches, cooking until lightly golden and the juices run clear. Remove the cooked chicken from the skillet and set aside.

To the same skillet still on medium high heat (add additional garlic if desired), then pour in the sauce. Bring this to a boil for 2-3 minutes, then add the chicken back in tossing with the sauce. Continue to cook and stir until the sauce starts to thicken, about another 5 minutes.

In a small skillet or pan place the sesame seeds over low heat. Stir and shake the pan often, allowing the sesame seeds to just get slightly golden with a toasted aroma, then remove from the heat.

Serve the warm chicken and sauce over rice, sprinkled with the toasted sesame seeds and green onions.
