Sweet Corn Cottage Cheese Fritters

Mix the Fritter Batter: In a bowl, combine cottage cheese, corn, green onion, parmesan, and egg. Add flour and mix just until combined. The batter will be thick but scoopable.

Cook the Fritters: Heat a thin layer of oil in a skillet over medium heat. Drop heaping tablespoons of batter into the pan and flatten slightly. Cook 2–3 minutes per side, or until golden and crisp. Drain on paper towels.

Make the Yogurt Lime Sauce: Stir together yogurt, lime juice and zest, chili powder, and salt.

Serve: Plate fritters with a generous scoop of the sauce. Optional toppings: more chopped herbs, chili crisp, or hot honey for sweet heat.
